


Situation: Domaine des Homs is located in the heart of the Minervois region, between Carcassonne and Narbonne.
Terroir: Terraces of Argent Double, composed of angular pebbles and leached clays.
Soil: Sandy, silty, clayey.
Grape Variety: 100% Grenache Gris.
Yield: 30 hl/ha.
Area: 1.5 hectares.
Vineyard Management: Certified organic farming by ECOCERT.
Harvest: Mechanically harvested with onboard sorting.
Vinification: This wine is obtained through gentle and rapid pressing. Natural settling occurs due to cold temperatures, and clarification takes place after 36 hours. Fermentation occurs at low temperatures (17°C to 18°C). One-third of the production is aged in barrels, with lees stirring throughout the fermentation and aging process. Aging on lees continues until bottling, which takes place as early as April.
Tasting Notes: Bright robe with notes of stone fruits, almond, citrus, and floral touches. The palate offers a beautiful balance with freshness and liveliness.
Food Pairing: Grenache Gris pairs perfectly with seafood dishes, grilled fish, Mediterranean cuisine, and summer salads.
